What if I want to make vegetarian sausages?

Vegetarian sausage can be made without the use of a mincer – however a food processor does make the blending easier.

Ingredients like Chickpeas. Polenta, Quorn, Beans and Quinoa make excellent bases to which you can add other vegetables and seasonings.

If you are looking for a vegetarian casing – there is one on the market.  Personally, we have tested this casing but didn’t like its consistency – quite plastic and chewy.  Saying that, if you really want to get one please be aware that there are, sadly, some sellers online that advertise the Dry Beef Collagen as vegetarian!  So please be careful – you can ask for the specification (this will have the list of ingredients) before purchasing, just to make sure.

The other alternative is to mould them into sausage shapes and roll them in a coating of polenta or breadcrumbs – then fry away!
